Salmon and Tomato Pasta

Ingredients:

- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 pound salmon, cut into cubes
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup white wine
- 1 (14.5 ounce) can diced tomatoes
- 1/2 pound cooked pasta
- 2 eggs, lightly beaten

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the garlic and cook for 1 minute.

3. Add the salmon cubes and cook for 3 minutes.

4. Add the oregano, salt, and pepper, and stir to combine.

5. Pour in the white wine and bring to a simmer.

6. Add the diced tomatoes and simmer for 5 minutes.

7. Add the cooked pasta and stir to combine.

8. Reduce the heat to low and add the eggs. Stir gently until the eggs are cooked and the sauce is creamy.

9. Serve hot. Enjoy!
