Make Sardine Potato Salad
Sardine Potato Salad
Ingredients:
- 4 large potatoes, peeled and cut into cubes
- 2 cans of sardines, drained and flaked
- 1 cucumber, diced
- 1 can of beans, drained and rinsed
- 1/2 cup of nuts, chopped
- 2 tablespoons of balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook for 10-15 minutes or until tender. Drain and set aside.
2. In a large bowl, combine the potatoes, sardines, cucumber, beans, and nuts.
3. Drizzle with balsamic vinegar and season with salt and pepper to taste.
4. Serve chilled or at room temperature. Enjoy!
