Mushroom and Squash Rice Bowl
Ingredients:
- 1 cup of uncooked rice
- 2 tablespoons of olive oil
- 1 cup of sliced mushrooms
- 1 cup of diced squash
- 2 spring onions, chopped
- 1 tablespoon of grated ginger
- 1 teaspoon of paprika
- 2 tablespoons of soya sauce
Instructions:
1. Cook the rice according to the instructions on the package.
2. Heat the olive oil in a large skillet over medium-high heat.
3. Add the mushrooms, squash, and spring onions and cook for 5 minutes, stirring occasionally.
4. Add the ginger, paprika, and soya sauce and cook for another 3 minutes.
5. Add the cooked rice and stir to combine.
6. Cook for another 5 minutes, stirring occasionally.
7. Serve warm. Enjoy!
