Teriyaki Chicken and Rice
Ingredients:
- 2 chicken breasts, cut into cubes
- 1 cup of uncooked white rice
- 1/2 cup of diced carrots
- 1/2 cup of diced onions
- 2 cloves of garlic, minced
- 1/2 cup of diced zucchini
- Salt and pepper, to taste
- 1 teaspoon of chili powder
- 2 tablespoons of soy sauce
Instructions:
1. Heat a large skillet over medium-high heat and add the chicken cubes. Cook until the chicken is cooked through, about 5 minutes.
2. Add the carrots, onions, garlic, and zucchini to the skillet and cook until the vegetables are tender, about 5 minutes.
3. Add the uncooked rice, salt, pepper, chili powder, and soy sauce to the skillet and stir to combine.
4. Reduce the heat to low and cover the skillet. Simmer for 15 minutes, or until the rice is cooked through.
5. Serve the teriyaki chicken and rice warm. Enjoy!
