Sauerkraut and Spinach Curry Rice
Ingredients:
- 2 cups cooked white rice
- 1 cup sauerkraut
- 1 cup fresh spinach, chopped
- 2 tablespoons curry powder
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 slices of bread, toasted
- 1/2 cup grated cheese
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the garlic and sauté for 1 minute.
3. Add the sauerkraut, spinach, curry powder, salt, and pepper and cook for 5 minutes, stirring occasionally.
4. Add the cooked rice and stir to combine.
5. Cook for an additional 5 minutes, stirring occasionally.
6. Serve the curry rice with toasted bread and grated cheese. Enjoy!
