Sausage and Mozzarella Egg Bake
Ingredients:
- 4 eggs
- 1/2 lb. sausage
- 1/2 cup diced tomatoes
- 1/2 teaspoon salt
- 1/2 cup shredded mozzarella cheese
- 1 clove garlic, minced
- 2 tablespoons butter
- 1/4 cup diced pickles
Instructions:
1. Preheat oven to 350°F.
2. In a large skillet, cook the sausage over medium heat until browned and cooked through. Drain any excess fat.
3. In a medium bowl, whisk together the eggs, tomatoes, salt, garlic, and pickles.
4. Grease a 9-inch baking dish with the butter.
5. Pour the egg mixture into the baking dish.
6. Top with the cooked sausage and mozzarella cheese.
7. Bake in preheated oven for 25-30 minutes, or until the eggs are set and the cheese is melted and golden.
8. Serve warm. Enjoy!
