Make Sausage and Rice Casserole
Sausage and Rice Casserole
Ingredients:
- 2 tablespoons of olive oil
- 1 pound of sausage
- 1 big onion, diced
- 2 cups of long-grain white rice
- 4 cups of water
- 1 cup of milk
- 1/2 cup of diced ham
- 1 tablespoon of mustard
- 1 teaspoon of pepper
- 1 teaspoon of salt
- 2 eggs, beaten
Instructions:
1. Preheat oven to 350 degrees F.
2. Heat the olive oil in a large skillet over medium-high heat. Add the sausage and onion and cook until the sausage is browned and the onion is softened, about 5 minutes.
3. Add the rice to the skillet and stir to combine. Cook for 2 minutes, stirring occasionally.
4. In a separate bowl, whisk together the water, milk, ham, mustard, pepper, and salt.
5. Pour the liquid mixture into the skillet and stir to combine. Bring to a boil, then reduce heat to low and simmer for 15 minutes, stirring occasionally.
6. Remove the skillet from the heat and stir in the beaten eggs.
7. Transfer the mixture to a greased 9x13 inch baking dish.
8. Bake for 25 minutes, or until the top is golden brown and the rice is cooked through.
9. Serve warm. Enjoy!
