Sausage and Rice Frittata

Ingredients:

- 4 eggs
- 1/2 cup cooked white rice
- 4 ounces cooked sausage, diced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil

Instructions:

1. Preheat oven to 375°F.

2. In a medium bowl, whisk together eggs, salt, and pepper.

3. Heat olive oil in a 10-inch oven-safe skillet over medium heat. Add sausage and cook until lightly browned, about 5 minutes.

4. Add cooked rice and stir to combine.

5. Pour egg mixture over the sausage and rice and stir to combine.

6. Cook over medium heat until edges begin to set, about 5 minutes.

7. Transfer skillet to preheated oven and bake for 15 minutes, or until eggs are set.

8. Let cool for 5 minutes before slicing and serving. Enjoy!
