Make Sausage and Rice Skillet
Sausage and Rice Skillet
Ingredients:
-1 lb. sausage
-1 cup uncooked white rice
-1 large tomato, diced
-1 small onion, diced
-2 eggs
-Salt and pepper, to taste
Instructions:
1. Heat a large skillet over medium-high heat. Add the sausage and cook until browned, breaking it up into small pieces as it cooks.
2. Add the diced onion and tomato to the skillet and cook until the vegetables are softened, about 5 minutes.
3. Add the uncooked rice to the skillet and stir to combine. Cook for another 2 minutes.
4. Reduce the heat to low and add 2 cups of water. Cover the skillet and let the mixture simmer for 15 minutes or until the rice is cooked through.
5. Make two wells in the rice mixture and crack the eggs into them. Cover the skillet and let the eggs cook for 5 minutes or until the whites are set.
6. Season with salt and pepper, to taste. Serve warm. Enjoy!
