Make Sausage and Vegetable Casserole

Recipe: Sausage and Vegetable Casserole

Ingredients:
- 6 sausages
- 1 cup tomato puree
- 4 potatoes, peeled and diced
- 2 carrots, peeled and sliced
- 1/2 cup chopped parsley
- 1 onion, chopped

Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, brown the sausages over medium heat until cooked through. Remove from the skillet and slice into bite-sized pieces.
3. In the same skillet, sauté the onion until translucent.
4. Add the diced potatoes and sliced carrots to the skillet and cook for 5 minutes.
5. Stir in the tomato puree and chopped parsley, and season with salt and pepper to taste.
6. Transfer the vegetable mixture to a casserole dish and arrange the sliced sausages on top.
7. Cover the casserole dish with foil and bake in the preheated oven for 30 minutes.
8. Remove the foil and bake for an additional 10 minutes, or until the vegetables are tender.
9. Serve hot and enjoy your delicious sausage and vegetable casserole!
