Sausage and Vegetable Frittata

Ingredients:

- 4-5 links of sausage, cut into small pieces
- 4-5 strips of bacon, cut into small pieces
- 1 onion, diced
- 1 head of broccoli, cut into small florets
- 2 cups of bok choy, chopped
- 6 eggs
- 1 bunch of asparagus, cut into 1-inch pieces
- 1 leek, diced
- 2 carrots, diced

Instructions:

1. Preheat oven to 375°F.

2. In a large skillet over medium-high heat, cook the sausage and bacon until browned and cooked through. Remove from the skillet and set aside.

3. In the same skillet, add the onion, broccoli, bok choy, asparagus, leek, and carrots. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender.

4. In a large bowl, whisk together the eggs. Add the cooked sausage and bacon, as well as the cooked vegetables. Stir to combine.

5. Grease a 9-inch pie plate with cooking spray. Pour the egg and vegetable mixture into the pie plate.

6. Bake in preheated oven for 25-30 minutes, or until the top is golden brown and the center is set.

7. Let cool for 10 minutes before slicing and serving. Enjoy!
