Sautéed Chicken and Tomatoes with Roasted Artichokes
Ingredients:
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tomatoes, diced
- 1 can artichoke hearts, drained and quartered
- 1/4 cup grated Parmesan cheese
Instructions:
1. Preheat oven to 400 degrees F.
2. Heat olive oil in a large skillet over medium-high heat. Add chicken cubes and season with garlic powder, Italian seasoning, salt, and pepper. Cook until chicken is golden brown and cooked through, about 8 minutes.
3. Add tomatoes and artichoke hearts to the skillet and cook for an additional 5 minutes.
4. Transfer the chicken and vegetables to a baking dish. Sprinkle with Parmesan cheese.
5. Bake for 10 minutes, or until cheese is melted and bubbly.
6. Serve hot. Enjoy!
