Sauteed Spinach, Onions, and Carrots
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 large carrots, diced
- 2 cloves garlic, minced
- 2 cups fresh spinach, chopped
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the diced onion and carrots and cook until softened, about 5 minutes.
3. Add the garlic and cook for an additional minute.
4. Add the spinach and cook until wilted, about 2 minutes.
5. Season with salt and pepper, to taste.
6. Serve warm. Enjoy!
