Savory Corn and Spinach Frittata
Ingredients:
- 2 tablespoons olive oil
- 1 cup fresh corn kernels
- 1/2 cup chopped spinach
- 4 large eggs
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
Instructions:
1. Preheat oven to 350 degrees F.
2. Heat olive oil in a 10-inch oven-safe skillet over medium heat.
3. Add corn and spinach and cook, stirring occasionally, until vegetables are softened, about 5 minutes.
4. In a medium bowl, whisk together eggs, milk, salt, and pepper.
5. Pour egg mixture into skillet and stir to combine with vegetables.
6. Sprinkle Parmesan cheese over the top.
7. Bake in preheated oven until eggs are set, about 20 minutes.
8. Let cool for 5 minutes before serving. Enjoy!
