Scrambled Egg and Potato Breakfast Sandwich

Ingredients:

- 2 eggs
- 2 slices of bread
- 1 potato, peeled and diced
- 1 onion, diced
- 2 tablespoons of butter
- Salt and pepper, to taste

Instructions:

1. Heat a large skillet over medium heat and add the butter.

2. Once the butter has melted, add the diced onion and potato and cook until the onion is translucent and the potato is tender, about 5 minutes.

3. Crack the eggs into a bowl and whisk until combined.

4. Add the eggs to the skillet and scramble until cooked through.

5. Toast the bread slices in a toaster or in a skillet over medium heat.

6. Place the scrambled egg and potato mixture on one slice of toast and top with the other slice.

7. Serve with salt and pepper, to taste. Enjoy!
