Scrambled Egg Fried Rice
Ingredients:
- 2 eggs
- 1/4 cup all-purpose flour
- 1/2 cup milk
- 2 potatoes, peeled and diced
- 2 cups cooked white rice
Instructions:
1. In a medium bowl, whisk together the eggs, flour, and milk until combined.
2. Heat a large skillet over medium heat and add the potatoes. Cook for 5 minutes, stirring occasionally, until the potatoes are tender.
3. Add the egg mixture to the skillet and cook for 2 minutes, stirring constantly.
4. Add the cooked rice to the skillet and cook for an additional 3-4 minutes, stirring occasionally, until the eggs and rice are cooked through.
5. Serve the scrambled egg fried rice warm. Enjoy!
