Scrambled Egg Fried Rice

Ingredients:

- 2 cups cooked rice
- 2 eggs
- 1/2 onion, diced
- 1/2 bell pepper, diced
- 1/2 potato, diced
- Salt and pepper to taste

Instructions:

1. Heat a large skillet over medium-high heat and add the diced onion and bell pepper. Cook until softened, about 3-4 minutes.

2. Add the diced potato and cook for an additional 2-3 minutes.

3. Crack the eggs into the skillet and scramble until cooked through.

4. Add the cooked rice and stir to combine.

5. Season with salt and pepper to taste.

6. Serve hot. Enjoy!
