Ingredients:
-1 onion, diced
-1 tomato, diced
-1 potato, diced
-4 eggs
-1 tablespoon olive oil
-Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and potato and cook until the onion is softened and the potato is lightly browned, about 5 minutes.
3. Add the tomato and cook for another 2 minutes.
4. In a separate bowl, whisk together the eggs until they are well-combined.
5. Pour the eggs into the skillet and stir to combine with the vegetables.
6. Cook, stirring occasionally, until the eggs are cooked through and the vegetables are tender, about 5 minutes.
7. Season with salt and pepper to taste.
