Ingredients:
-3 eggs
-2 tablespoons butter
-1 potato, diced
-1 onion, diced
Instructions:
1. In a medium skillet, melt the butter over medium heat.
2. Add the diced potato and onion to the skillet and cook until the vegetables are tender, about 5 minutes.
3. Crack the eggs into a bowl and whisk until combined.
4. Pour the eggs into the skillet with the potatoes and onions and scramble until the eggs are cooked through, about 5 minutes.
