2 eggs
1 tomato
2 potatoes
Salt and pepper to taste
Instructions:
1. Peel and dice the potatoes into small cubes.

3. Cook the potatoes for about 10 minutes, stirring occasionally, until they are golden and cooked through.
4. Meanwhile, dice the tomato into small cubes.
5. Crack the eggs into a bowl and whisk until combined.
6. Add the tomato and eggs to the pan with the potatoes and stir to combine.
7. Cook for about 5 minutes, stirring occasionally, until the eggs are cooked through.
8. Season with salt and pepper to taste.
