Scrambled Eggs with Tomato, Onion, and Cabbage
Ingredients:
- 2 eggs
- 1 tomato, diced
- 1/4 onion, diced
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 slices of bread, toasted
- 1/4 teaspoon oregano
- 1/4 head of cabbage, shredded
Instructions:
1. Heat a large non-stick skillet over medium heat.
2. Add the onion and garlic and cook until softened, about 2 minutes.
3. Add the tomato, salt, and pepper and cook for an additional 2 minutes.
4. Crack the eggs into the pan and scramble until cooked through.
5. Add the cabbage and oregano and cook for an additional 2 minutes.
6. Serve the scrambled eggs with the toasted bread. Enjoy!
