Scrambled Eggs with Tomatoes and Onions
Ingredients:
- 2 eggs
- 2 tablespoons of olive oil
- 1/2 cup of diced tomatoes
- 1/2 cup of diced onions
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a medium skillet over medium-high heat.
2. Add the diced onions and tomatoes and sauté for 3-4 minutes, stirring occasionally.
3. Crack the eggs into a bowl and whisk until combined.
4. Pour the eggs into the skillet and stir to combine with the vegetables.
5. Cook for 3-4 minutes, stirring occasionally, until the eggs are cooked through.
6. Season with salt and pepper to taste.
7. Serve warm. Enjoy!
