Scrambled Potato and Egg Sandwich

Ingredients:

- 2 potatoes, peeled and diced
- 2 eggs
- 2 slices of white bread
- Salt and pepper, to taste
- 2 tablespoons of butter

Instructions:

1. In a medium saucepan, melt the butter over medium heat.

2. Add the diced potatoes and cook for 8-10 minutes, stirring occasionally, until the potatoes are tender.

3. Crack the eggs into the saucepan and stir until the eggs are scrambled and cooked through.

4. Season with salt and pepper, to taste.

5. Toast the slices of white bread.

6. Divide the scrambled potato and egg mixture between the two slices of toast.

7. Serve and enjoy!
