Sesame-Lemon Sole with Arugula
Ingredients:
- 4 sole fillets
- 2 cups arugula
- 2 tablespoons lemon juice
- 1 green onion, thinly sliced
- 1 teaspoon salt
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce
Instructions:
1. Preheat oven to 375°F.
2. Place the sole fillets on a baking sheet.
3. In a small bowl, mix together the lemon juice, green onion, salt, sesame oil, and soy sauce.
4. Brush the mixture over the sole fillets.
5. Bake for 15 minutes, or until the fish is cooked through.
6. Meanwhile, in a large bowl, combine the arugula and remaining sesame-lemon mixture.
7. Serve the sole fillets with the arugula salad. Enjoy!
