Stir-Fried Tofu and Vegetables
Ingredients:
- 1 block of firm tofu, cubed
- 1 tomato, diced
- 1 chilli, diced
- 2 cloves of garlic, minced
- 1 inch of ginger, minced
- 2 heads of bok choy, chopped
- 1 carrot, sliced
- 2 radishes, sliced
- 2 tablespoons of sesame oil
Instructions:
1. Heat the sesame oil in a large skillet over medium-high heat.
2. Add the tofu cubes and cook for about 5 minutes, stirring occasionally, until lightly browned.
3. Add the tomato, chilli, garlic, and ginger and cook for another 2 minutes.
4. Add the bok choy, carrot, and radish and cook for another 5 minutes, stirring occasionally.
5. Serve hot and enjoy!
