Sesame Tofu and Vegetable Stir Fry

Ingredients:

-1 block of extra firm tofu
2 tablespoons of sesame oil
-1 zucchini, sliced
-1 cup of mushrooms, sliced
-2 tablespoons of soya sauce
-1 teaspoon of garlic, minced
-1 teaspoon of ginger, minced
-1/4 teaspoon of red pepper flakes
-2 tablespoons of sesame seeds

Instructions:

1. Drain and press the tofu for 10 minutes. Cut into cubes.

2. Heat the sesame oil in a large skillet over medium-high heat.

3. Add the tofu cubes and cook for 5 minutes, stirring occasionally.

4. Add the zucchini, mushrooms, soya sauce, garlic, ginger, and red pepper flakes. Cook for an additional 5 minutes, stirring occasionally.

5. Add the sesame seeds and cook for an additional 2 minutes.

6. Serve over steamed rice or noodles. Enjoy!
