Shakshuka
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- 1 (14.5 ounce) can diced tomatoes
- 1/2 cup vegetable broth
- 4 eggs
- 1/4 cup crumbled feta cheese
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the bell pepper, paprika, cumin, chili powder, and cayenne pepper and cook for an additional 2 minutes.
3. Pour in the diced tomatoes and vegetable broth and bring to a simmer. Reduce heat to low and simmer for 10 minutes.
4. Crack the eggs into the skillet and cover. Cook for 8-10 minutes, or until the eggs are cooked to your desired doneness.
5. Sprinkle the feta cheese over the top and season with salt and pepper to taste.
6. Serve warm with crusty bread or pita. Enjoy!
