Shepherd's Pie

Ingredients:

-1 lb ground beef mince
-1 onion, diced
-1 carrot, diced
-1 cup frozen mixed vegetables
-1/2 teaspoon garlic powder
-1/2 teaspoon dried oregano
-1/2 teaspoon dried thyme
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1/4 cup all-purpose flour
-1/2 cup beef broth
-1/2 cup milk
-2 tablespoons butter
-2 tablespoons olive oil
-2 tablespoons tomato paste
-1/2 cup shredded cheddar cheese
-1/2 cup breadcrumbs

Instructions:

1. Preheat oven to 375°F.

2. In a large skillet, heat olive oil over medium heat. Add onion and carrot and cook until softened, about 5 minutes.

3. Add ground beef mince and cook until browned, about 8 minutes.

4. Add garlic powder, oregano, thyme, salt, and pepper and cook for 1 minute.

5. Add flour and cook for 1 minute.

6. Add beef broth, milk, and tomato paste and cook until thickened, about 5 minutes.

7. Add frozen vegetables and cook for 3 minutes.

8. Grease a 9x13 inch baking dish with butter.

9. Pour beef mixture into the baking dish and spread evenly.

10. Sprinkle cheddar cheese and breadcrumbs over the top.

11. Bake for 25 minutes, or until cheese is melted and bubbly.

12. Let cool for 5 minutes before serving. Enjoy!
