Shepherd's Pie
Ingredients:
- 2 large potatoes, peeled and diced
- 1 large tomato, diced
- 1 cucumber, diced
- 1/2 cup milk
- 1/2 cup cooked white rice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 pound ground beef
- 1/2 cup shredded cheese
- 1/2 cup bread crumbs
- 1/4 cup chopped fresh parsley
Instructions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Place potatoes in a large pot and cover with water. Bring to a boil and cook until potatoes are tender, about 10 minutes. Drain and mash potatoes.
3. In a large skillet over medium heat, cook beef until browned, about 5 minutes. Add tomato, cucumber, and rice. Cook for an additional 5 minutes.
4. Add mashed potatoes, milk, salt, and pepper. Stir to combine.
5. Spread mixture into a 9x13 inch baking dish. Sprinkle with cheese and bread crumbs.
6. Bake in preheated oven for 25 minutes. Sprinkle with parsley before serving. Enjoy!
