Shepherd's Pie

Ingredients:

- 2 large potatoes, peeled and diced
- 1 onion, diced
- 2 tomatoes, diced
- 1 teaspoon of salt
- 1 pound of ground beef or lamb
- 2 tablespoons of butter
- 2 tablespoons of all-purpose flour
- 1 cup of beef broth
- 1/2 cup of shredded cheese

Instructions:

1. Preheat oven to 375 degrees F.

2. Boil potatoes in a pot of salted water until tender, about 10 minutes. Drain and set aside.

3. In a large skillet, heat the butter over medium-high heat. Add the onion and cook until softened, about 5 minutes.

4. Add the ground beef or lamb and cook until browned, about 5 minutes.

5. Add the tomatoes, salt, and flour and cook for another 2 minutes.

6. Add the beef broth and bring to a boil. Reduce heat and simmer for 5 minutes.

7. Grease a 9x13 inch baking dish. Spread the potatoes in the bottom of the dish.

8. Pour the beef mixture over the potatoes and spread evenly.

9. Sprinkle the shredded cheese over the top.

10. Bake for 25 minutes, or until the cheese is melted and bubbly.

11. Serve hot. Enjoy!
