Shin Noodle Soup with Eggplant and Brussel Sprouts
Ingredients:
- 2 packages of Shin Noodle Soup
- 1 large eggplant, diced
- 2 eggs
- 1 cup of brussel sprouts, halved
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the diced eggplant and cook for 5 minutes, stirring occasionally.
3. Add the brussel sprouts and cook for another 5 minutes.
4. Crack the eggs into the pot and stir to combine.
5. Pour in the Shin Noodle Soup and bring to a boil.
6. Reduce the heat to low and simmer for 10 minutes.
7. Season with salt and pepper to taste.
8. Serve hot and enjoy!
