Recipe Name: Shredded Beef with Sweet Potatoes and Brussels Sprouts

Ingredients:
- 1 chuck roast (approximately 2-3 pounds)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 large sweet potatoes, peeled and cubed
- 1 cup uncooked noodles or rice (of your choice)
- 1 pound Brussels sprouts, trimmed and halved
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 cup beef broth
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce

Instructions:

1. Preheat your oven to 325°F (160°C).

2. Season the chuck roast generously with salt and pepper on all sides.

3. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Sear the chuck roast on all sides until browned. This will take about 4-5 minutes per side.

4. Remove the seared chuck roast from the pot and set it aside.

5. In the same pot, add the sweet potatoes and cook for 5 minutes, stirring occasionally, until they start to brown slightly.

6. Meanwhile, cook the noodles or rice according to the package instructions. Once cooked, set them aside.

7. Add the Brussels sprouts, minced garlic, and dried thyme to the pot with the sweet potatoes. Sauté for 2-3 minutes until the Brussels sprouts begin to soften.

8. Pour in the beef broth, soy sauce, and Worcestershire sauce. Stir well to combine.

9. Return the seared chuck roast to the pot, nestling it among the vegetables. Cover the pot with a lid or aluminum foil.

10. Place the pot in the preheated oven and cook for 2.5 to 3 hours, or until the beef is tender and easily shreds with a fork.

11. Once the beef is cooked, remove it from the pot and shred it using two forks. Set the shredded beef aside.

12. Return the pot to the stovetop and bring the remaining liquid to a simmer. Cook for 5-10 minutes until the sauce thickens slightly.

13. Serve the shredded beef over the cooked noodles or rice, and spoon the sweet potatoes, Brussels sprouts, and sauce on top.
