Shrimp and Bean Power Bowl


-1/2 lb. shrimp, peeled and deveined
-1/4 cup black beans
-1/4 cup red kidney beans
-1/4 cup lentils
-1/4 cup chickpeas
-2 cups spinach
-1/2 avocado, diced
-1 tablespoon chia seeds
-1 egg


1. Heat a large skillet over medium-high heat.

2. Add the shrimp and cook for 2-3 minutes, or until shrimp are cooked through.

3. Remove the shrimp from the skillet and set aside.

4. In the same skillet, add the black beans, red kidney beans, lentils, and chickpeas. Cook for 5 minutes, stirring occasionally.

5. Add the spinach and cook for an additional 2 minutes, or until the spinach is wilted.

6. Remove the skillet from the heat and add the cooked shrimp, diced avocado, chia seeds, and egg. Stir to combine.

7. Divide the mixture between two bowls and serve. Enjoy!
