Make Shrimp and Black Bean Rice Bowl
Recipe Name: Shrimp and Black Bean Rice Bowl
Ingredients:
- 1 cup rice
- 1 can black beans, drained and rinsed
- 1/2 lb shrimp, peeled and deveined
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 tomato, diced
- 2 eggs
- 2 potatoes, diced
- 1 cup corn
- 1/2 cup shredded cheese
Instructions:
1. Cook the rice according to package instructions.
2. In a large skillet, heat some oil over medium heat. Add the shrimp and season with garlic powder, salt, and pepper. Cook until shrimp are pink and cooked through, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
3. In the same skillet, add the diced potatoes and cook until golden brown and cooked through, about 10 minutes.
4. Push the potatoes to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked through.
5. Add the black beans, corn, and diced tomato to the skillet. Cook for another 2-3 minutes until heated through.
6. Add the cooked rice to the skillet and stir everything together until well combined.
7. Top the rice mixture with the cooked shrimp and sprinkle with shredded cheese.
