Make Shrimp and Black Bean Stuffed Potatoes

Recipe Name: Shrimp and Black Bean Stuffed Potatoes

Ingredients:
- 4 large potatoes
- 1 can black beans, drained and rinsed
- 1 cup shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 1 cup cooked rice
- 1 cup chopped spinach
- 1/2 lb shrimp, peeled and deveined
- Salt and pepper to taste
- Olive oil

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Wash and scrub the potatoes, then pierce them with a fork a few times. Rub them with olive oil and sprinkle with salt. Place them on a baking sheet and bake for about 45-60 minutes, or until tender.
3. In a skillet, heat some olive oil over medium heat. Add the diced onion and bell pepper, and cook until softened.
4. Add the shrimp to the skillet and cook until pink and cooked through.
5. Stir in the black beans, cooked rice, and chopped spinach. Season with salt and pepper to taste.
6. Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh to create a hollow space.
7. Fill each potato half with the shrimp and black bean mixture, then top with shredded cheese.
8. Place the stuffed potatoes back in the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
9. Serve hot and enjoy!
