Shrimp and Broccoli Baked Potatoes
Ingredients:
- 4 large baking potatoes
- 1 pound of shrimp, peeled and deveined
- 2 cups of broccoli florets
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 375 degrees F.
2. Wash and scrub the potatoes, then poke a few holes in them with a fork. Place them on a baking sheet and bake for 45 minutes or until tender.
3. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the shrimp and season with garlic powder, salt, and pepper. Cook for 3-4 minutes, stirring occasionally, until the shrimp are cooked through.
4. Add the broccoli florets to the skillet and cook for an additional 3-4 minutes, stirring occasionally.
5. When the potatoes are done, remove them from the oven and cut them in half.
6. Divide the shrimp and broccoli mixture among the potatoes and serve. Enjoy!
