Shrimp and Chorizo Pasta with Spinach and Pesto Rosso
Ingredients:
- 4 ounces chorizo, diced
- 8 ounces pasta of your choice
- 2 cups spinach, chopped
- 1/2 cup heavy cream
- 8 ounces shrimp, peeled and deveined
- 1/2 cup pesto rosso
Instructions:
1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
2. Meanwhile, heat a large skillet over medium-high heat. Add the chorizo and cook for about 5 minutes, stirring occasionally, until it is lightly browned.
3. Add the spinach and cook for another 2 minutes, stirring occasionally, until it is wilted.
4. Add the cream and shrimp and cook for another 3 minutes, stirring occasionally, until the shrimp is cooked through.
5. Drain the cooked pasta and add it to the skillet with the chorizo and shrimp mixture.
6. Add the pesto rosso and stir to combine.
7. Serve the pasta warm with additional pesto rosso, if desired. Enjoy!
