Saffron Shrimp and Couscous

Ingredients:

-1/4 teaspoon saffron threads
-1 cup couscous
-2 tablespoons olive oil
-1 pound shrimp, peeled and deveined
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1/4 cup chopped fresh parsley
-1/4 cup chopped fresh cilantro

Instructions:

1. In a small bowl, combine the saffron threads with 2 tablespoons of hot water. Set aside.

2. In a medium saucepan, bring 2 cups of water to a boil. Add the couscous and stir. Reduce the heat to low, cover, and let simmer for 10 minutes.

3. In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 3-4 minutes, stirring occasionally, until the shrimp are cooked through.

4. Add the saffron mixture to the skillet and stir to combine.

5. Add the cooked couscous to the skillet and stir to combine.

6. Remove from heat and stir in the parsley and cilantro.

7. Serve the saffron shrimp and couscous warm. Enjoy!
