Shrimp and Sausage Ramen Stir Fry

Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 packs of ramen noodles
- 2 eggs
- 2 beef bullion cubes
- 2 tbsp sesame oil
- 1 cup carrots, sliced
- 1 cup udon noodles
- 1 andouille chicken sausage, sliced
- 1/2 cup almond milk
- 2 tbsp butter
- 1 tsp chili oil
- 2 tbsp oyster sauce
- 3 tbsp soy sauce
- 1/2 tsp cayenne
- 1 tsp Chinese five spice powder
- Salt and pepper to taste
- 1 tsp Italian seasoning
- Pinch of nutmeg
- 1 star anise
- 1/2 tsp cinnamon
- 2 bay leaves
- 2 tbsp corn starch

Instructions:
1. Cook the ramen noodles according to package instructions, drain and set aside.
2. In a large skillet, heat sesame oil over medium heat. Add shrimp and cook until pink, then remove and set aside.
3. In the same skillet, add carrots and udon noodles. Cook for 3-4 minutes until slightly softened.
4. Push the noodles and carrots to the side of the skillet and crack the eggs into the empty space. Scramble the eggs until cooked through.
5. Add the sliced sausage to the skillet and cook until browned.
6. In a small bowl, mix together almond milk, butter, chili oil, oyster sauce, soy sauce, cayenne, Chinese five spice powder, salt, pepper, Italian seasoning, nutmeg, star anise, cinnamon, and bay leaves.
7. Pour the sauce over the noodles, carrots, eggs, and sausage in the skillet. Add the cooked shrimp back in.
8. In a separate bowl, mix corn starch with a little water to create a slurry. Pour the slurry into the skillet and stir well to thicken the sauce.
9. Serve the shrimp and sausage ramen stir fry hot, garnished with some green onions if desired. Enjoy!
