Shrimp and Spinach Linguine

Ingredients:

-1 lb. shrimp, peeled and deveined
-1 lb. linguine
-1 cup whole milk
-1 cup shredded mozzarella
-3 tablespoons butter
-1 teaspoon salt
-1/2 cup Chardonnay
-2 tablespoons lemon juice
-2 cups fresh spinach, chopped
-1/2 teaspoon pepper

Instructions:

1. Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions.

2. Meanwhile, heat a large skillet over medium-high heat. Add the butter and melt. Add the shrimp and season with salt and pepper. Cook for 3-4 minutes, stirring occasionally, until the shrimp are cooked through.

3. Add the Chardonnay and lemon juice to the skillet and stir to combine. Simmer for 2 minutes.

4. Add the milk and mozzarella to the skillet and stir to combine. Simmer for 2 minutes.

5. Add the spinach and stir to combine. Simmer for 2 minutes.

6. Drain the cooked linguine and add to the skillet. Stir to combine.

7. Serve the shrimp and spinach linguine hot. Enjoy!
