Shrimp and Vegetable Fried Rice Recipe
Ingredients:
- 1 cup rice
- 1 can of beans
- 1/2 pound shrimp, peeled and deveined
- 2 potatoes, diced
- 1 cup corn kernels
- 1 bell pepper, diced
- Salt to taste
- 2 cloves garlic, minced
- 2 eggs
- 2 tomatoes, diced
Instructions:
1. Cook the rice according to package instructions and set aside.
2. In a large skillet, heat some oil over medium heat and add the shrimp. Cook until pink and opaque, then remove from the skillet and set aside.
3. In the same skillet, add the diced potatoes and cook until they start to brown and soften.
4. Add the corn, bell pepper, and garlic to the skillet. Cook until the vegetables are tender.
5. Stir in the cooked rice, beans, and diced tomatoes. Season with salt to taste.
6. Push the rice mixture to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until cooked through, then mix them into the rice mixture.
7. Finally, add the cooked shrimp back to the skillet and stir everything together until well combined.
8. Serve hot and enjoy your delicious shrimp and vegetable fried rice!
