Siddhu Curry
Ingredients:
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon ground fenugreek
- 1/2 cup tomato puree
- 1/2 cup coconut milk
- 1/2 cup cooked siddhu
- Salt to taste
Instructions:
1. Heat the oil in a large skillet over medium heat.
2. Add the cumin seeds and fry for 30 seconds.
3. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
4. Add the turmeric, coriander, garam masala, cayenne pepper, ginger, cardamom, cinnamon, black pepper, and fenugreek and cook for 1 minute.
5. Add the tomato puree and coconut milk and bring to a simmer.
6. Add the cooked siddhu and simmer for 10 minutes.
7. Season with salt to taste.
8. Serve hot with rice or naan.
