Skinny Pasta Chicken Salad
Ingredients:
- 2 chicken breasts
- 1 cucumber, diced
- 2 cups skinny pasta, cooked
- 2 tomatoes, diced
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. Place chicken breasts on a baking sheet and bake for 25 minutes, or until cooked through.
3. Meanwhile, in a large bowl, combine cooked pasta, cucumber, tomatoes, olive oil, lemon juice, parsley, salt and pepper.
4. Once chicken is cooked, let cool and then dice into small pieces.
5. Add chicken to the bowl and mix until all ingredients are evenly distributed.
6. Serve chilled or at room temperature. Enjoy!
