Smoked Ham and Eggplant Frittata

Ingredients:

- 2 tablespoons olive oil
- 1 small eggplant, diced
- 1/2 cup diced smoked ham
- 4 large eggs
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 350 degrees F.

2. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the diced eggplant and smoked ham and cook until the eggplant is softened and the ham is lightly browned, about 5 minutes.

3. In a medium bowl, whisk together the eggs, Parmesan cheese, mozzarella cheese, parsley, salt, and pepper.

4. Pour the egg mixture over the eggplant and ham in the skillet and stir to combine.

5. Place the skillet in the preheated oven and bake for 15-20 minutes, or until the eggs are set and the top is lightly browned.

6. Slice and serve warm. Enjoy!
