Smoked Paprika Chicken and Egg Fritters
Ingredients:
- 2 boneless, skinless chicken breasts, diced
- 2 eggs
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon smoked paprika
- 1/2 onion, diced
Instructions:
1. In a medium bowl, combine the diced chicken, eggs, flour, salt, pepper, smoked paprika, and diced onion. Stir until all ingredients are evenly mixed.
2. Heat a large skillet over medium-high heat. Add a tablespoon of oil to the skillet.
3. Using a spoon, scoop out small amounts of the chicken mixture and place them in the skillet. Flatten the mixture slightly with the back of the spoon.
4. Cook the fritters for 3-4 minutes on each side, or until golden brown and cooked through.
5. Serve the fritters with your favorite dipping sauce. Enjoy!
