Smoked Salmon and Egg Salad
Ingredients:
- 2 eggs
- 2 cups of cooked couliflower florets
- 4 ounces of smoked salmon, chopped
- 2 cups of mixed greens
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Instructions:
1. Bring a pot of salted water to a boil. Add the eggs and cook for 8 minutes. Remove the eggs and place them in a bowl of cold water.
2. In a large bowl, combine the couliflower florets, smoked salmon, and mixed greens.
3. Peel and chop the eggs and add them to the salad.
4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
5. Pour the dressing over the salad and toss to combine.
6. Serve the salad immediately. Enjoy!
