Smoked Salmon and Tempeh Pasta

Ingredients:

- 8 ounces of pasta
- 8 ounces of tempeh, diced
- 4 ounces of mushrooms, sliced
- 1 can of chickpeas, drained and rinsed
- 4 ounces of smoked salmon, diced
- 2 carrots, diced
- 1 leek, sliced
- 1 avocado, diced
- 2 eggs, lightly beaten
- 2 cloves of garlic, minced
- 1 onion, diced
- 1 bell pepper, diced
- 1 teaspoon of freshly grated ginger
- 2 tomatoes, diced
- 1 can of coconut milk

Instructions:

1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions. Drain and set aside.

2. Heat a large skillet over medium-high heat. Add the tempeh and mushrooms and cook for 5 minutes, stirring occasionally.

3. Add the chickpeas, smoked salmon, carrots, leek, and avocado and cook for another 5 minutes, stirring occasionally.

4. Reduce the heat to medium and add the eggs, garlic, onion, bell pepper, ginger, and tomatoes. Cook for 5 minutes, stirring occasionally.

5. Add the coconut milk and stir to combine. Simmer for 5 minutes.

6. Add the cooked pasta to the skillet and stir to combine. Simmer for 5 minutes.

7. Serve the smoked salmon and tempeh pasta warm. Enjoy!
