Smoked Sausage and Vegetable Rice Casserole

Ingredients:

- 2 cups of uncooked long grain white rice
- 2 tablespoons of olive oil
- 2 teaspoons of salt
- 1 teaspoon of pepper
- 1 teaspoon of paprika
- 1 teaspoon of cumin
- 1 teaspoon of basil
- 2 eggs
- 2 pickles, diced
- 2 potatoes, diced
- 1 teaspoon of granulated garlic
- 2 cups of chicken stock
- 2 tablespoons of all-purpose flour
- 1 cup of milk
- 2 tablespoons of mayonnaise
- 1 tablespoon of mustard
- 1 onion, diced
- 1 teaspoon of baking powder
- 1 teaspoon of cinnamon
- 1 teaspoon of nutmeg
- 1 teaspoon of curry powder
- 2 cups of frozen vegetables
- 8 ounces of smoked sausage, sliced

Instructions:

1. Preheat oven to 350 degrees F.

2. In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 3 minutes, stirring occasionally.

3. Add the diced potatoes, pickles, smoked sausage, and frozen vegetables. Cook for 5 minutes, stirring occasionally.

4. Add the rice, salt, pepper, paprika, cumin, basil, granulated garlic, and curry powder. Stir to combine.

5. In a medium bowl, whisk together the eggs, milk, mayonnaise, mustard, baking powder, cinnamon, and nutmeg.

6. Pour the egg mixture into the skillet and stir to combine.

7. Pour the chicken stock into the skillet and stir to combine.

8. Transfer the mixture to a 9x13 inch baking dish.

9. Bake for 45 minutes, or until the rice is cooked through.

10. Serve warm. Enjoy!
