Make Smoked Sausage and Vegetable Rice Skillet

Ingredients:
- 1 lb smoked sausage, sliced
- 2 cups diced potatoes
- 2 cups shredded cabbage
- 1 cup sliced carrots
- 1 cup diced celery
- 1 cup uncooked rice
- 1 can (14.5 oz) crushed tomatoes
- Salt and pepper to taste
- 2 cups water or chicken broth
Instructions:
1. In a large skillet or pan, cook the sliced smoked sausage over medium heat until browned and slightly crispy. Remove from the skillet and set aside.
2. In the same skillet, add the diced potatoes and cook for about 5 minutes until they start to soften.
3. Add the shredded cabbage, sliced carrots, and diced celery to the skillet. Cook for another 5 minutes until the vegetables begin to soften.
4. Stir in the uncooked rice and crushed tomatoes. Season with salt and pepper to taste.
5. Pour in the water or chicken broth and bring the mixture to a simmer.
6. Cover the skillet with a lid and let it cook for about 20-25 minutes, or until the rice is cooked through and the vegetables are tender.
7. Once the rice is cooked, add the cooked smoked sausage back to the skillet and stir to combine.
8. Serve the smoked sausage and vegetable rice skillet hot, garnished with fresh herbs if desired. Enjoy!
