Smoked Tofu and Veggie Pasta

Ingredients:

- 8 ounces of smoked tofu, cubed
- 2 cups of shredded cabbage
- 1 cup of shredded carrots
- 1 cup of broccoli florets
- 1/4 cup of sliced olives
- 8 ounces of pasta of choice
- 1 cup of cherry tomatoes, halved
- 1/2 cup of shredded lettuce
- 1/2 cup of shredded mozzarella cheese
- Salt and pepper, to taste
- 1/4 teaspoon of asafoetida
- 2 tablespoons of olive oil
- Juice of 1 lime
- 1/2 cup of diced onion
- 1/4 cup of cream

Instructions:

1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions. Drain and set aside.

2. In a large skillet, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes.

3. Add the smoked tofu, cabbage, carrots, broccoli, olives, and asafoetida. Cook for 5 minutes, stirring occasionally.

4. Add the cherry tomatoes, lettuce, and cream. Cook for another 5 minutes, stirring occasionally.

5. Add the cooked pasta to the skillet and stir to combine.

6. Add the mozzarella cheese and stir until melted.

7. Squeeze the lime juice over the pasta and season with salt and pepper, to taste.

8. Serve warm. Enjoy!
